I recently learned that the reason a lot of people don’t like coconut (according to two people I know who don’t like coconut) is the texture. I don’t really get it. Do these people just not like sweetened shredded coconut? What about desiccated? What about fresh? Or big dry flakes? I feel like there are way too many coconut types and applications to just give it a blanket dislike. I’m the kind of person who loves coconut, both in flavor and texture. I truly think it makes everything better. I was the kid who wished for Almond Joys at Halloween, who requested chocolate cake with coconut pecan frosting for every birthday, and who poked a hole in the bottom of every chocolate in the box, until I found the coconut one. I’m that person.

Monkey Lala Popsicles

Monkey Lala Popsicles | Loves Food, Loves to EatIT'S POPSICLE WEEK! That one week every year when Billy rounds up all of his closest, most elite food blogger friends (just kidding, everyone's invited) and we all post a kajillion recipes for popsicles and then we all eat popsicles and then you make popsicles and then you eat popsicles. It's total magic. Also, Billy is total magic. This year, to kick off #popsicleweek, he made an animated gif of Xtina eating a popsicle and asked us if we were team dirrty Xtina or team clean Christina. I said dirty.... so then I figured I better come up with a dirty pop.

Coconut Macadamia Biscotti | Great Food Blogger Cookie Swap 2014

It’s cookie swap time! This is my 3rd year participating in the Great Food Blogger Cookie Swap. The first year I made my ma’s recipe for the most amazing maple waffle cookies, and last year I made insanely good peppermint mocha icebox cookies. And this year?

Shaved Ice Coconut Pineapple Sundae

We booked our honeymoon! Guess where we're going? I'll give you a few hints.

It's a tropical paradise full of palm trees, coconuts, pineapples, shaved ice, ukelele music, waterfalls, beaches, coconuts, pineapples, and shaved ice. Did I mention coconuts, pineapples, and shaved ice?

Hawaii! Did you guess right? We're going to the island of Kauai, and I am stoooooookkkked. We went to Maui a hundred years ago (in 2008… ack!) and loved it a ton. For honeymoonin, we considered knocking out a bucket list destination like Vietnam or France, but in the end, we decided on good ol' Hawaii, for a few reasons. First off, for us west-coasters, that tropical palm-treed paradise is just a hop and skip away. A quick little flight. Which means less time in a plane/train/taxi-cab, and more time on a beach/hammock/surf board.

Second, we aren't even tryiiin to get travel stress on our h-moon. Don't get me wrong, we love traveling to new, foreign places. But, you have to admit, there's always at least one currency/customs/language/map-reading stressor that comes up in a new country. And normally, I'm all about navigating those waters, but after 10 months of wedding planning, the last thing I want to do is run out of lempira and not have an ATM or credit card machine in site (like happened in Honduras), or get lost in the middle of the night in the pouring rain in Brugge because oh-my-god-i-thought-that-was-the-castle-by-our-hotel, but-every-mother-effing-corner-has-an-identical-castle. You know. Nothing major, but things I don't want to think about on my honeymoon.

You know what I want to do on my honeymoon? Oh, and Evan's honeymoon? (Aside from that, perverts). I want to relax. I want to be holding a drink in my hand non-stop. I want to lay on the beach, with my husband (!) by my side. I want the option of doing absolutely nothing all day and not feeling guilty about. But. BUT! If we do want to adventure, Kauai is full of hikes and waterfalls and places where Elvis filmed movies. I think we're gonna have a really swell time. I think we're also going to consume a LOT of shaved ice.

Which brings me to this dessert! I was inspired by a few recipes for this, and by Hawaii! Christina from Dessert for Two posted this coconut snow the other day, and I just couldn't get it outta my head. It's basically just semi-frozen coconut milk, granita style. She served hers with chocolate sauce, which looks so rich and good, but with Hawaii thoughts swirling in my mind, I wanted something tropical! Another recipe that been's in and out of my dreams is this roasted pineapple popsicle. So naturally, I decided to combine the coconut granita magic with roasted pineapple. And not just any roasted pineapple… roasted pineapple sauce! And then, since the coconut snow and roasted pineapple sauce was sort of reminiscent of classic ice cream sundaes (remember that pineapple sauce!?) I threw some cherries on top. And some black sesame seeds, for good measure.

Coconut shaved ice! Roasted pineapple sauce! Go ahead, you can pretend you're on my honeymoon. Oh wait, is that creepy?   


Coconut Shaved Ice Sundae with Roasted Pineapple Sauce
Makes 2 sundaes

This is a simple recipe, but you do need to scrape the coconut snow every half hour for 2-2.5 hours, so keep that in mind. You may have extra pineapple sauce, but it's delicious on ice cream, yogurt, oatmeal, with a spoon, in a box with a fox, you name it. 

1 can coconut milk (full fat)
Juice from 1 lime
1/4 cup honey
1/4 cup water
1 pineapple
3 tablespoons brown sugar
Pinch sea salt
Cherries, pitted
Black sesame seeds


First, get your coconut snow in the freezer:

In a bowl, whisk together coconut milk, lime juice, honey, and water until smooth and combined. Pour into a shallow, freezer-proof dish (I used an 8 inch cake pan), and pop into freezer. After 30 minutes, scrape it all over with a fork to stop from freezing solid. Repeat this every 30 minutes for around 2-2.5 hours.


While coconut snow is in the freezer, make pineapple sauce:

Preheat oven to 400 degrees. Peel one whole pineapple, and cut into bite-sized chunks (feel free to save out a few wedges for the sundaes). Add to a baking dish (smaller, not a full baking sheet, it's ok if the pieces overlap), and top with brown sugar and a pinch or two of sea salt. Bake for 35-40 minutes. Pineapple should be super soft, and there should be a bit of liquid in the pan. Let come to room temperature, then add pineapple and any extra liquid in pan to a blender, and blend until smooth. If it's too thick, you can add a splash of water.


Assemble the sundae:

In a glass or bowl, fill halfway with coconut snow, add a small layer of pineapple sauce, fill the rest of the way with coconut snow, then top with more pineapple sauce, cherries, and black sesame seeds. Dig in!

I’m kind of a control freak, so I can’t imagine not doing it all, but man… this is hard work!

You know, the kind with a graham cracker crust, strawberry filling with maybe a layer of vanilla pudding or whipped cream.

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to Eat This icebox cake is sort of a retro remix of the fresh strawberry pie. But the fresh strawberry pie is kinda retro too. So I mean… Retro remix of a retro recipe?

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to Eat If you aren’t familiar with icebox cakes, they’re basically layered wafer cookies and whipped cream, chilled or frozen—the ultimate no bake summer dessert. The cookies soften in the whipped cream, and the whole thing kind of melds together into a cool, refreshing, super simple treat.

Strawberry Gingersnap Icebox Cake with Whipped Coconut Cream// Loves Food, Loves to Eat I added strawbs to this, because duh, and instead of classic wafers, I used gingersnaps, because strawberries and ginger go really well together! And also, I swapped out regular whipped cream with whipped coconut cream, and tossed a whole bunch of toasted coconut on top. The final product is creamy, slightly sweet, gingery, strawberry filled perfection.

This recipe is a breeze to throw together, but you do need to plan ahead. The coconut milk needs to chill overnight before whipping, and then the cake itself needs to chill at least 8 hours for maximum cookie softness. If you do happen to dig in early, the cookies will be crunchy and everything will be less melded together, but it will still taste great!

2 cans full fat coconut milk
¼ cup powdered sugar
1 teaspoon vanilla
1 pound of fresh strawberries, sliced
About 30-40 gingersnap cookies (I used store bought—the thinner the better)
¼-1/3 cup toasted coconut flakes

First, chill the coconut milk (this helps the solids separate from the liquids). Place both cans in the fridge overnight. 

Flip them upside down, open, and drain the liquid into another dish (set aside for a different use). Scoop the thick cream into a chilled bowl or bowl of your stand mixer, and whip until fluffy stiff peaks begin to form. Add powdered sugar and vanilla, whip to combine/ until smooth.

Assemble: In a baking dish or pie plate (I used a standard pie plate), add a layer of cookies (not overlapping). Spread half of the whipped coconut cream on top, and top that with the sliced strawberries (these can overlap). Top with another layer of cookies, and then the remaining cream. 

Cover and chill at least 8 hours. Serve cold or room temp. 

Add the coconut just before serving.

I think you should have donuts with a mom this Mother's Day. Whether it's your mom, your mom's mom, a friend's mom, a mom friend, or a new mom, and even if it's over the phone or FaceTime or Skype. The beauty of the internet is that we can be close even if we're far away. We can send pictures instantly, and even make the same donut recipe to eat together when we're miles and miles apart.

A lot of gals I know are having babies, and man, that looks really hard. And also my mom, she's so tough and brave and strong (and pretty! and fun!). Mom's really carry the load for everyone. I wish we understood that as teenagers. Hey teenagers, be nice to your moms!

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to Eat These donuts are so pretty and perfect for a springy Mother's Day brunch. I'm obsessed with the sweet coconut cake and spicy ginger glaze combo. If you're less into major ginger heat, start slow, with just a little ground ginger, and work up to the fresh stuff.

Baked Coconut Buttermilk Donuts with Ginger Glaze// Loves Food, Loves to Eat Baked Coconut Buttermilk Donuts with Ginger Glaze
Donut base adapted from this recipe
Makes 12 donuts 

Donuts
2 cups flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup sugar
1 egg, beaten
4 tablespoons butter, melted
1 cup buttermilk
1 teaspoon vanilla 
3/4 cup desiccated coconut (dried, shredded, and unsweetened)

Glaze
2 cups powdered sugar
1/4 teaspoon grated fresh ginger (grated super fine and pulpy on a microplane)
1/4 teaspoon powdered ginger
2.5 tablespoons water
1/4 teaspoon vanilla
Additional desiccated coconut (about 1/2 cup)

Preheat oven to 375 F. Grease donut pan(s).

In a large bowl, whisk together flour, baking soda, salt, and nutmeg. In a separate bowl, beat together the egg and sugar. Pour buttermilk in a measuring cup, and stir in melted butter and vanilla. Add half the buttermilk mixture to the flour mixture, stir, then add half the egg/sugar mixture, stir. Repeat with remaining buttermilk and egg/sugar mixture. 

Fill donut pan holes just barely to the top. I usually pipe donut batter in with a plastic bag, but this is a bit thicker, so I just spoon it in and spread it around with my finger or a spoon. Bake for 10-15 minutes (my oven took exactly 13 minutes), until donuts are just golden, spring back when touched, and a toothpick comes out clean. Cool in donut pan for a few minutes, then transfer to a wire rack. Repeat with remaining batter if you only have 1 pan. 

Cool completely on a wire rack before glazing. 

To make glaze: In a large bowl, whisk together both gingers, water, and vanilla. Add powdered sugar, and whisk until combined and smooth.

Put coconut in a separate dish or plate.

Dip cool donuts (smooth side down) in glaze, then immediately into coconut. Let sit until glaze hardens, about 15 minutes.

Carrot Cake Smoothies

I had this recipe ready for you guys earlier this week, but decided it was probably a bad idea to post it on April Fool’s day. Then you’d be all like “Oh, it’s not actually a carrot cake smoothie, its cake…right?” I’m sorry. It’s really a smoothie, no jokes here. There is no cake.

Carrot Cake Smoothies// Loves Food, Loves to Eat But, also not a joke: this smoothie is really good! And it’s good for you! And, if you’re gonna be filling your Easter keister up with a ton of ham, potatoes, deviled eggs, Cadbury cream eggs, homemade ricotta, coconut cakes, lemon pies, and other pastel-inspired goodies (like I will), then a pre-feast smoothie might be in order.

Carrot Cake Smoothies// Loves Food, Loves to Eat This smoothie has all the makings of a good carrot cake, minus the cream cheese frosting, butter, eggs, and cake parts. Carrots, coconut, nuts, and spices get all whirled up in your blender with other good and creamy things like coconut milk, bananas, and dates. It’s almost a carrot cake shake, rather than smoothie.

Carrot Cake Smoothies// Loves Food, Loves to Eat If you’re feeling really festive, you can top it all off with toasted coconut and chopped nuts. And also… that remaining coconut milk? Go ahead and whip that into a smooth and fluffy whipped cream. It’s really like the icing on the cake…or the smoothie shake, if ya know what I’m sayin’.

Carrot Cake Smoothies
Serves 2

5 medium-large carrots, peeled and roughly chopped
1/4 cup unsweetened shredded coconut
1/2 cup coconut milk (if you're using remaining for whipped cream, be sure to use a full fat version)
2 large dates, pitted
1/2 large banana
1/4 cup almonds or other nuts
1/2 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of fresh nutmeg and ground cloves
2 cups of ice

Toppings:
Toasted coconut
Chopped nuts

Place everything except ice and toppings in blender, and blend until smooth. Add ice, and blend until smooth. Pour into smoothie glasses or jars, and serve with toppings.

This banana bread is a little different. It’s not that super banana-y bread you’re used to. It doesn’t have chocolate chips in it. But, it could. I mean. It should, right? Note to self.

Same thing with deviled eggs and tuna sandwiches. Until about a year ago, I never ate a tuna sandwich that was made by someone other than my mom, my sister, or myself. And then I gathered up my courage and ordered a tuna sandwich from a little store/café a few blocks from my apartment, and I loved it, and I ordered it like it was going out of style…which it was, because now that store/café has closed.

Coconut & Ground Hazelnut Banana Bread// Loves Food Loves to Eat I also hate it when people say “tuna-fish sandwich.” That’s like saying you’re eating a chicken-bird sandwich, or a beef-cow burger. Sorry, I digress. We’re not here to talk about tuna. Or chicken or beef.

Coconut & Ground Hazelnut Banana Bread// Loves Food Loves to Eat We’re here to talk about banana bread. This one is heartier than most, with earthy whole wheat and hints of nutty-coconutty goodness throughout. It’s not overly sweet—less of a snack bread, and more of a breakfast bread. In fact, I think its best sliced thick, toasted, and slathered with a bit of butter and sea salt, served with a cup of coffee or tea. Evan likes it because it’s nutty without having distinguishable nut pieces (I’m a big fan of nuts in baked goods, but I know I’m in the minority here), and because, as he put it, it’s not as mushy as some.

Coconut & Ground Hazelnut Banana Bread// Loves Food Loves to Eat I like it because quick breads are my jam, and I typically have everything on hand to make it. And it tastes real real good. And, it came out of my own kitchen. So… there’s that.

Coconut & Ground Hazelnut Banana Bread Coconut & Ground Hazelnut Banana Bread

3 ripe bananas, mashed
2 eggs, beaten
2 tablespoons sour cream or Greek yogurt
1.5 cups whole wheat flour
1/2 cup finely ground hazelnuts/ hazelnut meal
1/2 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1/2 cup desiccated coconut (unsweetened, dried, and shredded)

Preheat oven to 350 degrees and grease a standard loaf pan.

Stir together bananas, eggs, and sour cream. Add remaining ingredients, and stir until combined. Scoop batter into loaf pan and bake for 50 minutes to an hour. Serve warm, room temperature, or sliced and toasted.

Coconut Margaritas

My sister and her boyfriend just got back from the most amazing look tropical vacation ever. They went to Turks and Caicos, those jerks! And while I zipped up my raincoat and pulled on my galoshes, she texted me pictures of white sand and bright blue water. Jealousy level max over here.

Coconut Margaritas// Loves Food, Loves to Eat Fact: the only possible way to overcome tropical vacation envy, aside from hopping on a plane, is to drink tropical drinks. Bonus points for pink umbrellas.

Coconut Margaritas// Loves Food, Loves to Eat Last week my friend LZ and I had these coconut margs at happy hour the other day, and they were amazing! They weren't too sweet or over the top, and since they were made with coconut water, I felt all good and hydrated, something I don't usually feel when I'm drinking tequila! 

Coconut Margaritas// Loves Food, Loves to Eat So of course, over the weekend I decided to shake up my own coconut margs, and pretend I was somewhere sunny and warm…just ignore that rain sound on the windows. That's just ocean waves. Obviously. 

Coconut Margaritas// Loves Food, Loves to Eat I'm not trying to brag or anything, but these are the most amazing margaritas I've ever had. A little tart, a little sweet, a little coconutty… tropical perfection! I invited LZ over for taste testing, and we each had a couple tastes. I mean, full-glass sized tastes. Then maybe a couple more. Who was counting, ya know? We certainly weren't.

Coconut Margaritas, on the Rocks
Inspired by El Borracho Coconut Margaritas
Makes enough for a crowd

Coconut Tequila (I used this brand)
Fresh lemon/lime juice (juice of 2 lemons & 3 limes, mixed)
Ginger syrup (like this, or make your own)
Coconut water (C2O is my favorite, Zico is my 2nd favorite)
1 can coconut cream (different from coconut milk, but that would work as well-PS. how great is Coco Lopez website... from like, 1999)
Toasted coconut sugar (2 tablespoons sugar & 3 tablespoons toasted desiccated coconut, stirred together)

To prepare your glass, add toasted coconut sugar to a plate. Run a lime wedge across the glass rim, and dip rim in sugar and coconut, twisting to coat. Add ice to glass.

For each margarita, fill up cocktail shaker half way with ice, and add:
 
1 oz tequila
1 oz lemon/lime juice
1/4 oz ginger syrup
2 oz coconut water
1/2 oz coconut cream

Shake until combined, and strain into prepared glass. Serve with a lime wedge and pink umbrella! Add a floater of coconut cream if you like it a bit sweeter.
